Speciality the star of in-store bakery

The in-store bakery sector is currently one of the top-performing sectors in convenience retailing, presenting shopkeepers with huge profit opportunities, according to Aryzta Food Solutions, the company behind Cuisine de France.

“Bakery is already the second-most frequently bought category in convenience and, even more importantly, in-store bakery shoppers spend over 70% more in-store than average symbol shoppers and on average buy at least two more items, highlighting the benefit of offering your customers freshly-baked goods,” said Vincent Brook, head of retail UK at the firm.
And while traditional fresh-baked lines remain popular, speciality breads are the current star performers, he said.
“They’re currently growing at more than 20% year-on-year, which shows that consumers are actively looking for more speciality breads.”
